Stuffed Potatoes


Potatoes
Sufficient for the number of guests
 
Salt & pepper
To taste
 
Bacon
Chopped and cooked - 1 1/2 - 2 strips per potato
 
Parsley
To taste
 
Onion
Chopped - To taste
 
Sour cream
To taste
 
Milk
To taste - you want the potatoes moist but not wet
 
Butter
To taste

Bake the potatoes until fone.
Cut in half lenthwise and scoop the potato out of the skin being careful not to tear it.
Mash the potato and add milk, butter, salt, pepper, onion, bacon, parsely and sour cream. Mix well.
Spoon the potato mixture back into the skins and bake until slightly broned on top.

Top off with smoe grated cheddar.
