Chopped and cooked - 1 1/2 - 2 strips per potato |

Sour cream |

Milk |
To taste - you want the potatoes moist but not wet |

Butter |
To taste |
Bake the potatoes until fone.
Cut in half lenthwise and scoop the potato out of the skin being careful not to tear it.
Mash the potato and add milk, butter, salt, pepper, onion, bacon, parsely and sour cream. Mix well.
Spoon the potato mixture back into the skins and bake until slightly broned on top.
Top off with smoe grated cheddar.
