Vinegar |

| 1 1/4 Cup |
Sugar |

| 2 Tbsp |
Whole Allspice |

| 1 Stick |
Cinnamon |
|
| 1/2 tsp |
Whole Cloves |

| 1 tsp |
Pickling salts |
|
Mix all ingredients for the brine and bring to a boil. Add the cooked beets and
bring back to a full boil again.
Fill sterilized jars with beet covered in brine, remove air bubbles and seal.
