Stuffed Meatloaf #1

1 1/2 lb
Ground beef
Preferably lean
2 medium
Eggs
 
1/3 cup
Ketchup
 
1 1/2 cups
Soup crackers
Crushed - 2 cups bread crumbs or 1 cup rolled oats and 1/2 cup water works well too
1 tbsp
Onion flakes

3/4 tsp
Parsley
 
3/4 tsp
Salt
 
1/4 tsp
Pepper
 
 
For the stuffing
 
3 tbsp
Butter
 
1/4 cup
Onion
Diced
1/4 cup
Celery
Diced - Optional
3 cups
Bread crumbs
Fresh is best
1/4 tsp
Thyme
 
1/4 tsp
Sage
 
 
Salt and pepper
To taste

Preheat oven to 350 degrees.
Mix the ingredients for the stuffing and set aside.
Mix all the remaining ingredients. Grease a standard loaf pan and press 3/4 of
the mixture into it covering the bottom, ends, and sides. Press the stuffing into
the hollow and pack it firmly. Place the remaining meat over the stuffing.
Bake for 50 - 60 minutes in a 350 degree oven.
Let stand for 10 minutes before removing from pan and serving.
