Preheat over to 350 degs.
In a large bowl mix meat, rice, onion, bell pepper, salt, thyme, eggs, and 1/2 cup
of tomato sauce.
Mix and shape
into loaf and place in a shallow pan.
Bake for 1 hour and pour off fat.
In a medium saucepan, heat oil and stir in remaining 1 1/2 cups of tomato sauce
and add the
parsley. Simmer over
low heat while meatloaf is cooking. Top loaf
with remaining sauce mixture
and return to the oven for 10 more minutes.
