Cactus Country Meatloaf

3/4 cup
Dried Tomatoes
Diced
1/4 cup
Cornmeal
 
3 cloves
Garlic
Minced
3/4 cup
Water
Boiling
1 1/2 lb
Ground Beef
Preferably lean ground
2 medium
Eggs
 
4 oz
Dried Chilies
Minced
1/3 cup
Cilantro or Parsley
 
1 1/2 tsp
Salt
 
1/4 tsp
Pepper
 
2 medium
Jalapeno
Seeded

Combine tomato, corn meal (reserve 1 tbsp for topping.), garlic and water and
set aside for 10minutes.
Thoroughly mix ground beef, eggs, onion, chilies, cilantro, jalapeno peppers, salt
and pepper. Form into a loaf and place in shallow baking pan about 12x4. Sprinkle
pan with reserved tbsp of corn meal.
Bake at 375 degrees for 50-60 minutes until juices run clear.
Let stand for 10 minutes before serving.
